What is a Slopper?
At its core, a slopper is a hamburger smothered in green chili sauce, topped with shredded cheese, and served open-faced on a soft hamburger bun. Often, it's accompanied by a side of French fries, which many diners prefer to pile right on top, letting the fries soak up all that chili goodness. It’s messy, it’s hearty, and it’s incredibly satisfying.
The green chili—typically a spicy, pork-laden stew made with roasted Pueblo green chilies—is what sets the slopper apart. This sauce is ladled generously over the burger, turning it into a fork-and-knife affair. Some versions include onions and additional toppings, but the basic elements remain consistent: burger, bun, green chili, and cheese.
The slopper’s appeal lies in its simplicity and comfort-factor. The combination of a juicy burger, spicy green chili, and melty cheese creates a flavor explosion that’s both familiar and exciting. It's a dish that perfectly encapsulates the bold, unpretentious spirit of Pueblo’s food culture.
Locals often debate over who serves the best slopper in town, but most will agree that no visit to Pueblo is complete without trying one. It's not just food—it's a rite of passage.
